It actually depends on what you mean with "garfunkeling", here is my intepretation:
Often when I hear Paul solo singing a S&G song, I sing along in the harmony of Art (the "2nd harmony"). This is very easy with songs like The Boxer, Slip Sidin Away, Cecilia etc. It's a little bit more tricky with a more dificult song like American tune. And sometimes it doesn't work at all, like The Sound of Silence, as Paul is singing Arts harmony when performing solo.
Despite what I just said about the Sound of Silence, here is a video where someone plays guitar and sing Paul's voice. If you never tried it, this video is obviously perfect to do a little garfunkeling :o)
